
Well I had a little extra time today, and I fired up the
SMOKEMIESTER, and the BBQ, and prepared a small rolled roast for supper.
Low and Slow is the way I found produces the
most tender, and
juiciest roasts that ever make our table. A little
Good Seasons Salad Dressing, the kind that you mix with water and vinegar, sprinkled on dry just before going on the grill , is the way to go. I kept the temp around 210 f and let it
smoke and
cook for the next4 hours till a temp around 165 f. The last hr. of cooking I seasoned the roast a little more with some
Montreal Steak Seasoning. I removed the roast from the
BBQ, let it rest for 15 minutes, sliced it up, and served it. A side dish of
yellow corn, a
BBQed potato with
butter and
chives, and an
A&W Root Beer, made for the perfect
